So Mom and Dad have made it to Hawaii! Tonight I made my Shoyu Chicken for them for dinner.... Poppa John did not want to eat it :( sniff sniff... he ate rice and corn for dinner... about half way thru mom and I guilted him into eating a few pieces which he said were good.. but i thought they were pretty yummy and definately would make it again and again! lol Today we did the tourist thing at Dole, had lunch, ate pineapple ice cream, did the choo choo train, and fed the carp! Tommorow we are going on a dinner cruise with fire works so that should be a fun day!

I have decided to create a blog to incorporate my recipes from family and my new local favs we have stumbled upon here in Hawaii! I hope you enjoy! Mahalo! SHOYU CHICKEN 3-4 servings 6 chicken thighs, with bone and skin ½ cup sugar ½ cup soy sauce 1 clove of garlic 1 inch piece ginger, grated (dried will work if you do not have fresh... I have done it both ways) Place all ingredients in a pot; bring to a boil. Lower heat, cover and simmer for about 30-40 min. Serving suggestion: Serve with/over rice. Add a side of corn and a green salad (possibly lilikoi vinaigrette) and you have a local meal from the aina' ( neighborhood) If you have the fresh ginger it does have a little extra something something... but at the same time these ingredients are usually staples I always have on hand... So I have used the dried ginger and it still comes out good! I love this recipe because although its not a “FAST” recipe it is definitely and EASY and tasty one! Add in the fact I do have rice cooker too, its almost a set it and forget type of recipe for me! HAUPIA (coconut pudding) yield 16 pieces 1/3 cup sugar 1/3 cup cornstarch 1/8 tsp. Salt 2 ½ cup coconut milk ( MILK not cream or water!) in the ethnic section or the drinks section Combine sugar, cornstarch, and salt; stir in coconut milk. Cook over low heat, stirring constantly, until thickened. Pour into an 8-inch square pan; let cool; refrigerate until firm. Cut into 2x2 inch pieces. Traditionally served on Ti Leaves for presentation! This is a staple at any luau, or Hawaiian local backyard bbq... The best I have had so far is a variation on this from Ted's Bakery on the North Shore is Chocolate Haupia Pie! I have found/devised a similar tasting recipe that I will add later! LOMI SALMON( LOMILOMI) yield 4-6 servings ½ pound salted salmon ( lox can be substituted in a pinch) 5 large ripe tomatoes, diced 1 cup chopped green onion 1 medium onion, finely chopped 1 cup crushed or shaved ice Soak Salmon in water for 3-4 hours; rinse well. Remove skin and bones; shred salmon into a bowl. Add tomatoes and onions; lomi or knead until mixed well. Chill thoroughly and add ice just before serving. To make your own salted salmon: sprinkle a piece salmon with sea salt. Lomi or massage salt into the fish and refrigerate overnight. The fish will cure and take on a salty flavor. Lox may be substituted for salted salmon if in a bind... This is one of my most favorite sides at a luau.... and although I have not actually made this at home yet. I was excited to see this published with the article “What Hawai'i Likes to Eat!” CHOCOLATE HAUPIA PIE makes 1-9 inch pie 1 9 inch unbaked crust 1 cup milk 1 (14 oz.) can coconut milk (again not water or cream) 1 cup sugar 1 cup water ½ cup cornstarch 7/8 cup chocolate chips topping: ½ cup heavy cream ¼ cup white sugar Preheat oven to 350 degrees. Bake crust for 15 min. Cool In a sauce pan whisk milk, coconut milk, and 1 cup sugar. In a seperate bowl disovle cornstarch in water. Reduce to a simmer and slowly whisk in cornstarch. Continue to cook on low heat until thick about 3 min. In a glass bowl microwave chocolate chips for 1 min till melted. Divide coconut pudding into two bowls. Mix in chocolate and spread that mix onto the bottom of the crust. Then Pour remaining pudding on top of the chocolate layer. Refrigerate one hour. Whip cream and ¼ cup of sugar until stiff peaks form.. Garnish with chocolate swirls if you wanna get fancy! This is by far my most favorite food I have had in Hawaii so far, other than fresh pineapple! This pie does take some time to make vs your regular pudding pie... but the taste is far more magical compared to a jello pudding and cool whip pie!!! |
